The ingredients that I use for low-carb, grain-free cooking and baking are;
In place of wheat or grain flours I use Honeyville blanched almond flour, coconut flour and whey protein. When I first started using almond flour I used the unblanched kind that was available in the bulk section of my local health food store. I read in many blogs that to make baked goods with a better texture you need to use Honeyville blanched almond flour because it is ground finer than Bob’s Red Mill almond flour and other brands. I have found this to be true. I order my almond flour online at Honeyville.com.
The coconut flour that I get in the bulk section of my Sprouts or Good Earth stores works for me. I like Natural Factors Whey Protein in unflavored, vanilla or chocolate for baking. I also like Jay Robb’s vanilla Whey Protein.
In place of sugar I use stevia that my brother and his children get for me in Bolivia. I love it because it does not have a bitter aftertaste. We are working on possibly importing it from Bolivia to sell in the US. The Bolivian stevia seems sweeter than the US varieties; one cup of sugar sweetness is ½ tsp of Bolivian stevia. Because of this in my recipes I will give the amount of sugar sweetness so that you can adjust the recipe according to your stevias sweetness. As all of you who use stevia know it is an herb which is 300 times sweeter than sugar, it is always better to add a little at a time. It has no affect on your bloodsugar. If any of you have a favorite brand of stevia I would appreciate an e-mail, I have heard that KAL stevia is a good brand.
I also use erythritol in my baking and cooking, I like powdered and granulated Swerve. I also like Zsweet, both Swerve and Zsweet are an erythritol stevia blend. Erythritol is the best of the sugar alcohols, it does not affect your blood sugar or cause digestion upset like some of the other sugar alcohols do. I do not care for the taste of erythritol, in the recipes that I have modified I cut way down on the amount of erythritol that I use and increase the stevia amount.
I use Just Like Sugar Brown in Marks chocolate chip cookies that he Loves! It is made of chicory root which is very healthy for you. I weighed the Just Like Brown Sugar and the Zsweet and discovered that JLBS weighs half as much as Zsweet so it actually costs the same.

Other ingredients that are staples in my pantry are coconut oil, coconut milk, extra virgin olive oil, light olive oil, unsweetened chocolate, unsweetened shredded coconut, almonds, walnuts, pecans, sunflower seeds, pumpkin seeds, natural peanut butter and good gelatin.
I get my coconut oil at Costco it is Nutiva Organic Extra Virgin Coconut Oil, 78 fl oz for $22. We eat a lot of coconut oil. I use full fat coconut milk with no preservatives in it, guar gum is fine. I use good quality olive oils. I like Ghirardelli 100% cacao unsweetened chocolate, it is a 4 oz bar. I get the unsweetened shredded coconut, sunflower seeds and pumpkin seeds in the bulk section of my Sprouts or Good Earth health food stores. I get my nuts at Costco or in the bulk section of the health food store. My peanut butter is natural, just peanuts and salt. Adam’s crunchy 100% natural peanut butter is available at Costco if you can use a large size, you store it in the refrigerator. Good gelatin is Bernard Jensen’s or Great Lakes, I get it on my Amazon store. Locally I can find Bernard Jensen’s at The Vitamin Shoppe and at the Good Earth. I cannot find Great Lakes gelatin locally. I like Ghirardelli’s 100% cocoa unsweetened chocolate, I get it at Wal-Mart for about $2.33 for a 4 oz bar.
Dairy- We used to drink a lot of skim milk and eat low-fat cheese. Now we drink a little delicious, whole, raw milk. I make kefir out of the raw milk, it is so good! We eat all kinds of full fat cheeses and organic butter. I use a lot of unsweetened vanilla almond milk, mostly in baking. I get the Blue Diamond brand because it is less expensive than the Silk brand. They are both non GMO the Silk says it on the front, you need to read that fact on the back of the Blue Diamond.
